Our Rosato is blended from only the best parcels of fruit from our two Estate owned and managed vineyards. All grapes are produced according to organic principals, fastidiously maintained and the crops kept low to ensure the production of super premium quality wines. The 2018 vintage was long and even allowing for great concentration and excellent natural acidity, ideal for the production of this particular style of wine.
The 2018 vintage Rosato di Sonoma was blended from our Estate grown fruit immediately following the destemming and crushing to tank. The resulting pale red juice was run to well used barrels and inoculated with a variety of yeasts. The majority of the fermentation occurred in the barrel before being racked to tank. Following four months in tank on its yeast lees, the wine was fined and filtered to bottle. It is named Rosato as is appropriate for a Rosé with considerable body and concentration, typical of the Italian style.
